Coconut Date Bars

Nature's candy


3 tablespoons unsweetened shredded coconut

1 pound very soft, fresh, pitted dates (soak dates in water if not soft enough), no preservatives

¼ cups walnuts, finely chopped



1. Sprinkle 2 tablespoons of coconut over the bottom of an 8 inch square baking dish. Firmly press dates into coconut, covering bottom of dish.

2. Sprinkle with remaining tablespoon of coconut and the walnuts, gently pressing into dates.

3. Cut into 2 inch squares. Bars can be stored in an airtight container for 2 to 3 days.
